Well that’s a good question…..this is an ingredient that I cook a lot and so versatile!…Tonight I wanted something simple for dinner but colourful in my plate… Anything goes with it. For me it is the “passe partout”, the one that “supports” whatever you add to it. Egg is the perfect “partner” for a simple, quick dish on a weekly night.
So here it is, a spicy and colourful frittata..perfect for an evening dinner!
For four people, you will need:
8 medium eggs
150ml single cream
1 knob of butter
3 spring onions finely chopped
1 tbsp basilic finely chopped
1 tbsp tarragon finely chopped
1/2 red pepper
1/2 green pepper
1/2 feta cut in small cube
1 tsp harissa
salt and pepper
Turn the over on grill 200C
Deseed and cut your peppers in chunks and place them on an one proof dish, skin up.
Place them in the oven to grill. Once they are grilled (it should take 15/20mn) take them off and place the grilled pepper in a close plastic tub to let them cool and soften. Once you can handle it remove the skin and cut in thin slices.
Prepare the other ingredients.
Turn the oven on at 200C
Mix in a bowl your eggs, single cream and harissa. Salt and pepper
Add the other ingredients
Eat a big frying pan with a knob of butter and pour the mixture. When the “omelette” starts to be cooked at the bottom, turn the heat off, spread the cube of feta on top and place your frying pan in the oven for 15 minutes or until it puffs up and brown.
Serve hot with a green mix salad!…..An Egg will never let you down 🙂
