Tomato and Mozzarella Bruschetta

This is a dish that I have been doing most of my summer holidays especially when I have just spent two fantastic weeks in Italy. To be honest as soon as I was there it was the first recipe that pop into my mind and I was spoiled with choice in terms of fresh tomatoes and “veritable” mozzarella!

This is an easy and speedy recipe that can be done for a light lunch or as an appetizer.

You will need for four people:

Fresh basil leaves Two garlic gloves Four good slice of a bread loaf Olive oil Mozzarella slices Cherry tomatoes sliced Salt and pepper

In a small bowl pour at least three tbsp of olive oil and crush one to two garlic gloves in it (according to your taste). Stir with a spoon. Turn the oven on grill and with a brush cover well and generously your slices of bread with the oil/garlic mixture on one side.

In a pan pour some olive oil with some sea salt and heat it….once it is hot pour the sliced cherry tomatoes with some crushed garlic and pepper. Cook for 2 min max…tomatoes should be soft,  keep their shape but not mushy. Turn the heat off.

Put your four slices of bread in the oven and keep an eye on the grill as the slices should be brown and slightly grilled on the sides but not burned. Once they are grilled remove them from the oven and split the tomatoes among them. Add on top some slices of mozzarella and fresh basil leaves.

Drizzle some olive oil and serve with a fresh green salad. Enjoy!!
